Mutton Dressed as Mutton

I’m not usually a big fan of the ideas of the Prince of Wales which tend to wander into the foothills of loopy, but I’m right behind his campaign to make mutton popular again.

When I was younger, we didn’t eat lamb because it was too expensive and mutton was the affordable alternative. My mum cooked it slowly in the oven or in a pressure cooker and the taste and texture were sublime, a richer flavour than lamb which I think can be a bit bland without a rich sauce.

I found an online farm where you can order welsh mountain mutton, reckoned to be the best and I will have a go at persuading Mrs Parrot and the chicks that we should try it instead of our usual Sunday roast. I’ve even got some recipes to experiment with.

The only disturbing aspect of this trip down a culinary lane was the anatomically correct inflatable sheep I stumbled over when looking for the above illustration. Mind boggles.
